Soto Tegal

500 gr   daging sandung lamur
2 ltr       air
½ sdt    garam
2 btg     sereh, pukul
2 lbr      daun salam
5 sdm   minyak goreng
1 sdt     lada halus
1 sdt     gula pasir
1 sdt     garam
1 bh      kaldu blok

Bumbu Halus:

5 bh      bawang merah
5bh       bawang putih
3 bh      kemiri

Sambal Tauco, haluskan:

3 bh      cabe merah besar, buang biji, rebus
3 bh      bawang putih
3 bh      bawang merah
2 bh      kemiri
250 gr   tauco
Minyak goreng untuk menumis


100 gr   daun bawang, iris halus
100 gr   tauge
100 gr   soun, rendam sebentar
3 bh      jeruk nipis

Cara membuatnya:

  1. Masak air hingga mendidih, masukkan daging, masak hingga empuk. Angkat, potong dadu, sisihkan.
  2. Panaskan minyak goreng, tumis bumbu halus hingga wangi. Masukkan sereh, daun salam, aduk sebentar. Masukkan kedalam kaldu daging, didihkan sekali lagi.
  3. Masukkan garam, lada halus, kaldu blok dan gula. Aduk rata, matikan api.

Sambal tauco:

Panaskan minyak banyak, tumis semua bahan sambal hingga wangi. Angkat.

Cara penyajian:

Dalam mangkuk, susun tauge, daun bawang dan daging. Beri sambal tauco, tuangi kuah panas. Beri kecap, sambal cabe rawit dan air jeruk nipis sesuai selera.
