Serabi Beras

Serabi beras

Bahan:

200 gr tepung beras putih
1 sdt ragi instan
3 sdt gula pasir
560ml santan encer
2 btr telur
1/2 sdt garam halus
2 sdm air pandan suji / 3 tetes pasta pandan

Cara membuatnya:

  1. Campur tepung beras, ragi instan dan gula pasir, aduk rata. masukkan telur dan santan sedikit demi sedikit sambil diaduk rata. saring bila perlu.
  2. Beri garam dan air suji, aduk rata. Diamkan selama 2 jam (tinggal kerja didapur deh .
  3. Panaskan cetakan serabi. Tuang adonan sampai 3/4 penuh, biarkan terlihat matang berlubang-lubang, tutup. matangkan sempurna. angkat.
  4. Buat kinca dari gula jawa, santan encer dan daun pandan, masak sampai mendidih dan gula larut. saring.
  5. Sajikan serabi dg siraman kuahnya.

Catatan:

Bila tidak ada cetakan serabi, bisa menggunakan cetakan kue lumpur.

    Pada waktu didiamkan, perlu ditutup kain basah kah? Apakah berpengaruh kalau ditutup kain dan tidak? trim’s.

      Ditutup saja, tapi tidak perlu dengan kain basah.

    Ass bu fat.. aku bikin kok ga bisa bolong2 yah serabinya? Trus tengahnya ga mateng padahal api udah kecil banget.. aku pke cetakan tanah liat

      Bila waktu fermentasi sudah cukup akan terlihat adonan berbuih yg menandakan ada banyak udara tertangkap. Buih inilah yg juga memastikan serabi bakal bersarang. Tinggal memastikan wajan sudah cukup panas ketika adonan dituang. Tutup cetakan hanya bila sarang sudah terlihat terbentuk ya. Bila bagian tengah masih mentah berarti kurang lama memasaknya.

    saya lagi nyari referensi resep. ternyata ada banyak variasi bahannya, mulai dari yang sederhana hingga yang rumit. sampe saat ini belum nemu komposisi yang menghasilkan tekstur kenyal, berpori, dan mateng semua. kira-kira biar dapet kenyalnya apa yang harus ditambah atau di kurang?

      Kami kurang tahu standard kenyal yg ibu harapkan seperti apa. Resep kami memang jadinya seperti itu. Apakah ibu sudah mencoba membuatnya? enak lho jadinya.

    Cetakan nya ngga perlu di olesi minyak atau margarin yah…?? Apa ngga lengket

      Betul, ibu. Karena kami menggunakan cetakan serabi anti lengket seperti di atas, maka tidak perlu mengoles minyak lagi. Jika menggunakan cetakan biasa, ya, harus dioles minyak dulu.
